Last week, I included you all in photos of a picnic T and I had in our backyard last weekend. The pasta salad I made incorporated a few Foodzie items.
While I cooked the Baia pasta I received in my February Cooking Box, I halved cherry tomatoes, cut corn off of the cob, cubed avocado, chopped cilantro, and minced jalapeno. After the pasta was cooked to al dente, I drizzled the pasta with olive oil and squeezed the juice of a lime over it. I mixed all of the vegetables and herbs in with the pasta, crumbled feta over the top, and added salt & pepper to taste.
This pasta salad will be the star of your BBQs, parties, or get togethers this summer. The creaminess of the avocado, the sweetness and crunch from the corn, the zing from the lime, and the saltiness of the feta all come together to create the most delectable side dish. Add grilled shrimp for a complete meal. This is one dish that everyone should not only put on their edible bucket list now, but also cross it off just as quickly!
